Rabbit Quebec

Prep time:

Serves:

2 rabbits, cut up
1/4 stick margarine
salt and pepper
paprika
1/2 cup onion, diced
3 cloves garlic, minced
2 cups sherry

Melt margarine in frying pan and brown rabbit pieces. Season to taste with salt, pepper and paprika. Place pieces in casserole and sprinkle with onion and garlic. Pour sherry in frying pan, mix and scrape, then pour over meat. Bake for 2 hours at 325 degrees or until rabbit is tender.
