Fried Whitebait

Serves: 4
450 g whitebait
50 g plain flour
salt and freshly ground pepper
oil or fat; for deep frying
sprigs parsley; to garnish
lemon wedges; to serve
brown bread and butter; to serve
Carefully rinse and dry the whitebait. Coat in seasoned flour. Half
fill a deep pan with fat or oil and heat to 180 C / 350 F. Fry the
whitebait in batches for 2-3 minutes, until crisp. Drain on absorbent
kitchen paper. Arrange on 4 individual plates and garnish with
parsley. Serve as a starter with lemon wedges and brown bread and
butter.
